Ingredients

  • 4 bacon slices, about 1/4 lb. total
  • 2 lb. beef chuck, cut into 2-inch pieces and patted dry
  • Salt and freshly ground pepper, to taste
  • 2 yellow onions, chopped
  • 2 garlic cloves, minced
  • 1 Tbs. Hungarian paprika
  • 1 tsp. caraway seeds
  • 5 fresh oregano sprigs
  • 1 Tbs. tomato paste
  • 1 cup dry white wine
  • 1 cup low-sodium chicken broth
  • 1 red bell pepper, seeded and chopped
  • 6 Yukon Gold potatoes, about 2 lb. total, quartered
  • 1/2 cup sour cream
