- 2 tablespoons bacon drippings or vegetable oil
- 1 large yellow onion, coarsely chopped
- 1 large green bell pepper, cored, seeded, and coarsely chopped
- 1 large garlic cloves, minced
- 1 1/2 pounds ground beef chuck (not too lean)
- 1/3 cup chili powder
- 2 1/2 teaspoons crumbled dried leaf oregano (preferably Mexican oregano)
- 3/4 teaspoon ground cumin
- 3 large whole bay leaves (preferably fresh)
- 1/2 to 1 teaspoon teaspoon ground hot red pepper (cayenne), or to taste
- 1 teaspoon salt, or to taste
- 1 (10-ounce) can diced tomatoes with green chilies, and all liquid
- 3 tablespoons tomato paste
- 1 (14.5-ounce) can beef broth plus enough water to total 2 1/2 cups
- 1 (15.5-ounce) can red kidney or pinto beans, drained and rinsed well
