Spinach Balls Malfatti Recipe

Ingredients

  • 10 sprigs parsley (I use dried and about 3 Tbsp. Spoons or a palm full)
  • 1 clove chopped garlic
  • ¼ chopped onion
  • 1 package (1 Cup) chopped frozen spinach or swiss chard (squeeze out the water)
  • salt (optional) I don’t use much salt and you get it from the soup stock.
  • pepper to taste
  • 1 ½ Cups bread soaked in soup stock (chicken bouillon works great)
  • ½ cup dry bread crumbs
  • 3 eggs beaten
  • ½ Cup grated parmesan cheese
  • olive oil

Description

These Require A Bit Of Pre Planning As You Need To Make Them The Day Before And They Need To Chill Over Night. I Find Them Very Tasty, As We Use Whole Wheat Bread Around Our House That Is What I Use For The Wet Bread Crumbs. I Think It Gives It A Nice Fla
