Roasted Red Pepper Boursin And Prosciutto Quiche Recipe

Ingredients

  • For Crust:
  • 1-1/4 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 3 tablespoons cold unsalted butter, cut in small dice
  • 5 tablespoons chilled organic shortening, cut in small dice ("Jungle" brand is best, available at Whole Foods)
  • 1/4 cup ice water
  • For Filling:
  • 6 organic egg yolks
  • 1-1/2 cups heavy cream
  • 2-1/2 ounces boursin cheese
  • 1 teaspoon kosher salt
  • 2-1/2 ounces prosciutto, cut in small dice (about 6 paper-thin slices)
  • 1 cup chopped fresh green asparagus
  • 1/4 cup roasted red peppers, cut in strips or medium dice
  • 1 teaspoon minced fresh garlic (not the prechopped stuff please!)
  • 1/2 cup chopped fresh basil leaves
  • freshly cracked black pepper to taste
