Ingredients
- For Crust:
- 1-1/4 cups all-purpose flour
- 1 teaspoon kosher salt
- 3 tablespoons cold unsalted butter, cut in small dice
- 5 tablespoons chilled organic shortening, cut in small dice ("Jungle" brand is best, available at Whole Foods)
- 1/4 cup ice water
- For Filling:
- 6 organic egg yolks
- 1-1/2 cups heavy cream
- 2-1/2 ounces boursin cheese
- 1 teaspoon kosher salt
- 2-1/2 ounces prosciutto, cut in small dice (about 6 paper-thin slices)
- 1 cup chopped fresh green asparagus
- 1/4 cup roasted red peppers, cut in strips or medium dice
- 1 teaspoon minced fresh garlic (not the prechopped stuff please!)
- 1/2 cup chopped fresh basil leaves
- freshly cracked black pepper to taste
