- 1-1/2 cups vegetable oil
- 4 large eggs
- 2-1/2 cups all purpose flour
- 2-1/4 cups granulated sugar
- 2/3 cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups finely shredded peeled carrots
- 1 cup packed sweetened flaked coconut
- 1-1/2 teaspoons grated orange peel
- 11 ounce can mandarin oranges drained and cut into 1/2" pieces
- Frosting:
- 2-1/2 cups semisweet chocolate chips
- 1 cup unsalted nondairy margarine at room temperature
- 1/3 cup powdered sugar
- 1/4 cup frozen orange juice concentrate thawed
- Additional canned mandarin orange segments drained and patted very dry
