- 3/4 cup finely chopped onion (1 medium)
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped fresh flat-leaf parsley
- 1 teaspoon fine sea salt
- 3/4 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon black pepper
- 1/2 teaspoon baking soda
- 1/4 teaspoon cayenne
- About 6 cups vegetable oil (48 fl oz)
