Peanut Pad Thai Recipe

Ingredients

  • 8 ounces udon noodles (or rice noodles)
  • 1/3 cup peanut oil
  • 16 ounces tofu, cut into small cubes
  • 3 tablespoons ground ginger
  • 4 tablespoons chopped garlic
  • 1 onion (or the equivalent in scallions)
  • 2 eggs, scrambled (optional)
  • 1/4 cup soy sauce
  • 3/4 cup peanut butter
  • 1 cup peanuts, diced
  • 2 cup bean sprouts
  • 1/2 cup lime juice
  • 1 tablespoon chili powder
  • 1/2 cup lemon juice
  • 1 lemon, quartered (for garnish)
