For the Yellow Pepper Soup:

- 1 cup chopped onions
- 1/4 cup chopped celery

- Salt

- 1 teaspoon chopped garlic
- 6 medium-large yellow bell peppers, seeded and chopped
- 6 cups chicken stock
- 1 cup heavy cream
For the Red Pepper Soup:
- 2 tablespoons olive oil
- 1 cup chopped onions
- 1/4 cup chopped celery
- 1/4 cup chopped carrots
- Salt
- Freshly ground black pepper
- 1 teaspoon chopped garlic
- 6 medium-large red bell peppers, roasted, cleaned and chopped
- 4 cups chicken stock
For the Garnish:

- 1/4 cup fresh sprigs cilantro
