Shrimp Creole Recipe

Ingredients

  • 1/3 cup olive oil (divided)
  • 2 Tbsp butter
  • 2 cups chopped onions
  • 1 cup chopped green bell pepper
  • 1 cup chopped celery
  • 4 cloves garlic, finely minced
  • 2 15 oz cans Italian plum tomatoes (or diced tomatoes)
  • 1/2 of a 6oz can tomato paste
  • Kosher salt and freshly ground black pepper to taste
  • 1 tsp Worcestershire sauce
  • 3 slices lemon peel
  • 2 whole cloves
  • 1 bay leaf
  • 1/2 tsp dried thyme
  • 1 tsp brown sugar
  • 1 medium eggplant, diced (skin on)
  • 1 1/2 pounds medium shrimp, peeled
  • 1 Tbsp capers
  • 3 Tbsp chopped flat leaf parsley
  • Tabasco or other red pepper sauce
  • FOR THE RICE
  • 1 Tbsp minced onion
  • 1 Tbsp finely minced garlic
  • 1 cup long grain white rice
  • 1 cup brown rice
  • 2 cups chicken stock, 1/2 cup water
