- 1/2 of a 6oz can tomato paste
- Kosher salt and freshly ground black pepper to taste
- 1 tsp Worcestershire sauce
- 3 slices lemon peel
- 2 whole cloves
- 1 bay leaf
- 1/2 tsp dried thyme
- 1 tsp brown sugar
- 1 medium eggplant, diced (skin on)
- 1 1/2 pounds medium shrimp, peeled
- 1 Tbsp capers
- 3 Tbsp chopped flat leaf parsley
- Tabasco or other red pepper sauce
- FOR THE RICE
- 1 Tbsp minced onion
- 1 Tbsp finely minced garlic
- 1 cup long grain white rice
- 1 cup brown rice
- 2 cups chicken stock, 1/2 cup water
