Beer-Braised Pot Roast

Ingredients

  1. One 4-pound chuck eye roast or other chuck roast, tied
  2. Kosher salt and freshly ground pepper
  3. All-purpose flour, for dusting
  4. 2 tablespoons extra-virgin olive oil
  5. 12 ounces diced bacon
  6. 1 large onion, coarsely chopped
  7. 3 garlic cloves
  8. 3 cups beef stock or low-sodium broth
  9. 12 oz. amber ale
  10. 6 thyme sprigs, 6 parsley sprigs and 2 bay leaves, tied
  11. 1 1/2 pounds parsnips, peeled and cut into 3/4-inch chunks
  12. 1 1/2 teaspoons cornstarch mixed with 2 tablespoons water
