Asian Chicken Salad with Wasabi Dressing


  1. 4skinless, boneless chicken breast halves (1 3/4 pounds)
  2. 1/2cup mayonnaise
  3. 1/4cup rice vinegar
  4. 2 1/2tablespoons wasabi powder
  5. 1 1/2teaspoons Asian sesame oil
  6. 1 1/2tablespoons water
  7. Kosher salt and freshly ground pepper
  8. 2heads Boston lettuce, torn into bite-size pieces
  9. 1large Asian pear—halved, cored and thinly sliced
  10. 1/2seedless cucumber, halved lengthwise and thinly sliced on the bias
  11. 2scallions, white and green parts thinly sliced
  12. 1cup mung bean sprouts
  13. 1/2cup roasted wasabi peas, coarsely chopped
