  • 1/2 cup water chestnuts, finely chopped
  • 2 green onions, chopped, divided
  • Stir-fry Sauce:
  • 1/4 c. granulated sugar
  • 1/2 c. water
  • 2 tbsp. hoisin sauce
  • 3 tbsp. low-sodium soy sauce
  • 2 tbsp. rice wine vinegar
  • 2 tbsp. organic ketchup
  • 1 tbsp. lemon juice
  • splash sesame oil
  • sriracha sauce (red rooster sauce), to taste

  • inner lettuce leaves, like butter lettuce, boston or iceberg
  • *mung bean noodles (Saifun), fried at last minute for topping
  • shredded carrots, for garnish
