Fresh Chicken Rolls

Ingredients

  • 900g skinless chicken breast fillets
  • 2 tablespoons finely chopped fresh root ginger
  • 2 tablespoons finely chopped Jalapeno chilli
  • 65g cucumber, peeled, cut into very thin strips
  • 4 tablespoons finely chopped Thai basil leaves
  • 4 tablespoons finely chopped fresh mint leaves
  • 4 tablespoons finely chopped fresh coriander
  • 1 1/2 tablespoons finely chopped lemon grass
  • 75g peanuts, ground in a food processor
  • 4 tablespoons Thai fish sauce
  • 3 tablespoons lime juice
  • 2 teaspoons caster sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon peanut oil
  • 16 rice paper wrappers
  • 16 leaves red or green leaf lettuce

Description

These Are Similar To Spring Rolls, Only Healthier. They Are Made By Enclosing A Deliciously Light Chicken Filling, In A Rice Paper Wrapper. They Are Wonderful For Summer. Serve With A Hot-chilli Sauce For Dipping.
