- 2 tablespoons finely chopped Jalapeno chilli
- 65g cucumber, peeled, cut into very thin strips
- 4 tablespoons finely chopped Thai basil leaves
- 4 tablespoons finely chopped fresh mint leaves
- 4 tablespoons finely chopped fresh coriander
- 1 1/2 tablespoons finely chopped lemon grass
- 75g peanuts, ground in a food processor
- 4 tablespoons Thai fish sauce
- 3 tablespoons lime juice
- 2 teaspoons caster sugar
- 1 tablespoon sesame oil
- 1 tablespoon peanut oil
- 16 rice paper wrappers
- 16 leaves red or green leaf lettuce
Description
These Are Similar To Spring Rolls, Only Healthier. They Are Made By Enclosing A Deliciously Light Chicken Filling, In A Rice Paper Wrapper. They Are Wonderful For Summer. Serve With A Hot-chilli Sauce For Dipping.
