Healthy Crab Bisque

Ingredients

  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp butter
  • 1 yellow onion, chopped (1 1/2 cups)
  • 2 celery stalks, chopped (1 cup)
  • 2 carrots, chopped (1 cup)
  • 4 cloves garlic, chopped
  • 2 ears fresh corn, kernels cut off (2 cups)
  • 1/2 small head cabbage, chopped (4 cups)
  • 2 1/2 tsp kosher salt
  • 1 1/4 tsp fresh ground black pepper
  • 2 cups water
  • 3 bay leaves
  • 1 lemon, zest and juice
  • 2 6.5 oz cans of chopped clams
  • 1 large ripe tomato, chopped (1 cup)
  • 1 15 oz can garbanzo beans
  • 3 Tbsp fresh basil, chopped
  • 3 cups fat free half & half
  • 1 cup shaved parmesan reggiano cheese + extra for garnish
  • 1 cup dry sherry
  • 1 lb can lump crab meat (such as Phillip's)
  • 10 sprigs flat leaf parsley, chopped
  • 10 dashes cayenne pepper
