Pesto Grilled Filet Mignon

Ingredients

  • For the beef:
  • 2 8 oz. pieces of filet mignon
  • 3 1/2 Tbsp olive oil
  • 1 Tbsp rosemary
  • 1 1/2 Tbsp ground pepper
  • 1/2 tsp sea salt
  • 2 Tbsp red wine vinegar
  • 1 cup basil pesto
  • 2 Tbsp brie cheese
  • For the olive salad:
  • 1 Tbsp kalamata olives, chopped and pitted
  • 1 Tbsp parsley, chopped
  • 1 Tbsp basil, chopped
  • 2 tsp chives, chopped
  • 1/2 tsp capers
  • 1/8 tsp garlic, finely minced
  • 1/2 tsp white wine vinegar
  • 1 anchovy, diced
  • 1/2 cup mixed salad greens

Description

Filet Mignon Is Marinated In A Mixture Of Olive Oil, Rosemary, Pepper, Vinegar And Pesto And Grilled. A Salad Is Served Along Side.
