    2 T olive oil, separated
    1- 14 oz can artichoke hearts, drained and quartered
    1 c spinach, cleaned and dried
    1/2 onion, diced
    1/2 c chicken stock
    1/2 c walnuts
    2 cloves of garlic, minced
    salt and pepper, to taste
    1/2 c Parmesan cheese
