Easy Veggie Chickpea Salad

Ingredients

    Salad:
    1 can Chickpeas, drained & rinsed
    1-2 Tomatoes, cubed
    1 small red onion, sliced/chopped
    1 sweet pepper (red, orange, yellow), chopped
    As many other veggies as you want - some suggestions: broccoli, corn, cucumbers, baby spinach, zucchini, carrots, beets, mushrooms, etc.

    Dressing:
    2 tbsp Extra Virgin Olive Oil
    *2 tbsp Balsamic vinegar
    2 cloves Garlic, crushed
    1 tbsp ground flax seed
    1 tbsp Basil

    * I love balsamic, but this might be a little strong for some people - you can use less balsamic and add in a bit of lemon juice and water to dilute it.
