Zucchini And Fava Bean Fritters

Ingredients

    3 medium zucchinis
    1 can (19 oz) fava beans, drained (or you can use fresh ones, blanched)
    2 to 3 eggs
    About 1/2 cup of breadcrumbs
    Green olive paste or tapenade (you could also throw seeded olives into the food processor)
    About 1/2 cup of sun-dried tomatoes, chopped
    Garlic to taste
    Grated parmesan cheese (optional)
    Salt and pepper to taste

Description

Fritters Are Typically Fried; These Are Baked To Cut The Fat. Just About Anything Can Become Fritterish; All You Need Is Something To Hold It Together, Such As Egg, Breadcrumbs, And/or Mashed Beans. This One Has All Three.
