Horseradish-crusted Chicken Breast With Wisconsin Asiago And Mushroom Sauce

Ingredients

6 boneless chicken breast halves (6 ounces each), pounded thin
1 1/2 cups (6 ounces) grated Wisconsin Asiago cheese
3/4 cup sun-dried tomatoes, sliced
3/4 cup plain dry bread crumbs
1/2 cup hazelnuts, chopped & toasted
2 tablespoons onion or shallots, minced
2 tablespoons canola oil
1 1/2 tablespoons prepared horseradish
1 tablespoon minced parsley
2 tablespoons butter, melted
3 cups spinach, cooked lightly
1 1/2 cups Mushroom Sauce (recipe follows)

Mushroom Sauce:
4 tablespoons butter, divided
3 tablespoons minced onion
4 cups (10 ounces) shiitake or crimini mushrooms, sliced
1 cup dry red wine
2 cups chicken stock, divided
1/2 cups hazelnuts, chopped and toasted
1 tablespoon prepared horseradish
2 teaspoons honey
