Heart Of Palm And Artichoke Salad Recipe

Ingredients

  • 1 can liquid removed Palm hearts sliced 1/4 inch
  • 1 can liquid removed artichoke quartered
  • 1/2 c. each finely minced yellow and red bell pepper
  • 1/2 c. finely minced red onion
  • 1/2 c. finely minced celery
  • 1/2 c. green olives with pimiento
  • 1/2 c. black olives
  • 3 minced green onions
  • 1/3 c. liquid removed capers
  • 1 tin liquid removed and minced anchovy
  • 4 or possibly 5 sliced sun dry tomatoes
  • 2 sprigs fresh parsley, oregano and thyme minced
  • 1/2 c. good extra virgin olive oil
  • 1 lg. lemon
  • 1/2 c. favorite vinegar
  • Salt and fresh grnd black pepper

Description

Mix All Ingredients Together In Glass Bowl. Let Stand In Refrigerator For 1 Hour. Serve Over Romaine.
