- 3Â 3/4 lb salmon fillet skinned
- 3/4 c. extra virgin olive oil
- 2/3 c. finely-minced fresh cilantro
- 1 tsp Dijon mustard
- 3/4 tsp salt divided
- 1/4 tsp freshly-grnd black pepper
- 4 x ears fresh corn shucked, grilled or possibly

- 2 x red bell peppers diced
- 2 x yellow bell peppers diced
- 1Â 1/2 c. sliced green onions
