  • 2 lb Eels - skinned cut 1 1/2" long pieces
  • 2 med Onions minced
  • 1 x Bay leaf
  • 1 pch Thyme
  • 2 sprg Parsley
  • 1 x Garlic clove
  • 2 c. Red wine
  • 1/2 tsp Salt
  • 1/8 c. Brandy
  • 2 Tbsp. Butter
  • 12 sm white onions
  • 1 c. Sliced mushrooms fresh or possibly canned
  • 1/4 tsp Pepper
  • 8 slc French bread fried in butter
