Aubergine Parmigiana Recipe

Ingredients

  • 2 tsp extra virgin olive oil, preferably extra-virgin
  • 2 x Large eggs
  • 3 Tbsp. water
  • 1 1/2 c. plain dry bread crumbs
  • 1/2 c. grated Parmesan cheese
  • 1 Tbsp. Italian seasoning
  • 2 x aubergines - (abt 2 lbs) peeled, and
  •     sliced 1/4" thick
  • 3 can diced tomatoes in juice - (15 ounce ea)
  • 2 x garlic cloves chopped
  • 1 c. shredded part-skim mozzarella cheese
