Ingredients

  • 2 T milk
  • 2 beaten eggs
  • 3/4 cup Italian style Bread Crumbs
  • 1/2 cup Parmesan cheese
  • 1-1/2 lb eggplant, peeled and sliced, 1/2 inch thick
  • 3-4 T olive oil
  • lb ground turkey
  • 1/2 t salt
  • 1/4 t pepper
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1-15 oz can tomato sauce
  • 1-1/2 t dried Italian seasoning, crushed
  • 1-16 oz container ricotta cheese
  • 2 cups shredded Italian blend cheese
  • Additional Parmesan cheese
