- Salt and pepper
- 1 large bunch or head of broccoli, cut into 12-16 spears
- 2 cloves garlic, finely chopped
- 2 tablespoons extra virgin olive oil (EVOO)
- Canola oil, for shallow pan frying
- 3/4 cup shredded cheddar, Asiago or Monterey Jack cheese
