Ingredients
- For the Chermoula coating you will need:
- 2 garlic cloves,peeled and finely chopped
- 1 onion peeled and finely chopped
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground paprika
- 4 tablespoons fresh coriander chopped
- 4 tablespoons fresh parsley chopped (i use flat leaf)
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground turmeric
- 4 tablespoons olive oil
- juice of half a lemon
- salt to season
- All the above can be adjusted for your own tastes,i usually add more garlic and cayenne.
- Main Dish:
- 4 haddock or cod fillets
- 4 tomatoes sliced
- 1 large green (Bell) pepper, cut into thin strips
