  • 6 small chicken breast fillets, skinless
  • 2 tbsp brandy
  • 2 fat clove garlic, crushed
  • 200 g rashers of streaky bacon, cut into strips, or bacon lardons
  • 1 large onion, sliced
  • 250g small chestnut mushrooms, sliced
  • 1 tbsp sunflower oil
  • 25 g butter
  • 3 tbsp flour
  • 300 ml red wine, (ideally claret)
  • 300 ml chicken stock
  • 1 tbsp tomato pure
  • 1 tbsp soy sauce
  • 1 tbsp redcurrant jelly
  • salt, and freshly ground pepper
  • 1 tbsp thyme, chopped
  • 2 tbsp parsley, chopped
