Ingredients

  • 3 lean bacon rashers,chopped
  • 1 medium-sized onion, chopped
  • 1 cup green pepper, finely chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, crushed
  • 1 cup mushrooms, sliced
  • 1 tablespoon thyme, fresh
  • 1 bay leaf
  • 1/2 teaspoon chilli powder(optinal)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups long grain rice, washed, soaked in cold water for 30 mins & drained
  • 240 grams cooked chicken, chopped
  • 120 grams ham, diced
  • 250 grams chorizo sausage, sliced
  • 240 grams cooked prawns, shelled
  • 2 1/2 cups chicken stock
  • 420gram tinned tomatoes
  • chopped parsley for garnish
  • 1 tablespoon vegetable oil
