Facile Coq Au Vin Recipe


  • 1/2 lb bacon slices
  • 1 medium sized onion, peeled, sliced
  • 1 chicken, 3 lb, or 3 lbs chicken parts, excess fat trimmed, skin ON (live a little)
  • 6 garlic cloves, peeled
  • Salt and pepper to taste
  • 2 cups chicken stock
  • 2 cups red wine (pinot noir, burgundy, or zinfandel or I used Merlot)
  • 2 bay leaves
  • Several fresh thyme sprigs or thyme powder
  • Several fresh parsley sprigs
  • 1/2 lb button mushrooms, trimmed and roughly chopped
  • 2 Tbsp butter (you only live once)
  • Chopped fresh parsley for garnish
