Jerk Pork Salad

Ingredients

2 Scallions, chopped
1 Large clove garlic, chopped
1/2 Green bell pepper, stemmed, seeded, and chopped
1/2 Red bell pepper, stemmed, seeded and chopped
1 Small jalapeno pepper, stemmed and seeded
1 tbsp Chopped fresh thyme leaves or 1 tsp dried
1 tsp Ground allspice
1 tsp Ground nutmeg
1/2 tsp Black pepper
2 tbsp Fresh lime juice
1 tbsp Canola oil
2 Pork tenderloins ( 12 oz each)
Chili Lime Vinaigrette
2 tbsp Apple cider vinegar
2 tsp Dijon mustard
2 tsp Canola oil
1/2 tsp Grated lime zest
1 tbsp Fresh lime juice
1/2 tsp Sugar substitute
1/4 tsp Chili powder
Pinch of salt
Pinch of black pepper
6 c Mixed baby greens
1 c. Halved grape tomatoes
1 c. Chopped cucumber
1 can (15 oz) cannellini beans or chickpeas, drained and rinsed
