4 Scallions, including tops, cut into 1/2 inch lengths
4 Medium size carrots, peeled and cut into matchstick strips
1 1/2 cups Long grain white rice
3 cups Basic Chicken Stock or canned chicken broth
2 tbsp Reduced-sodium soy sauce
1 lb Asparagus, cut into 1 inch lengths, or 1 pkg (10 ounces) frozen cut asparagus, thawed and drained
1/2 cup Walnuts, toasted
