â¢2 cups Plain breadcrumbs
â¢8 egg whites, lightly beaten (reserve yolks for bechamel)
â¢1 cup Grated Kefalotyri or Parmesan cheese
â¢Bechamel Sauce:
â¢1 cup Salted butter (2 sticks)
â¢1 cup Flour
â¢4 cups Milk, warmed
â¢8 egg yolks, lightly beaten
â¢pinch Ground nutmeg
