1 lb 10 oz (750 g) plain Greek-style yogurt 3 1/2 oz (100 g) chickpea flour 1 tsp salt 1/2 tsp ground turmeric 1/2 tsp sugar 1/2 tsp ground garam masala 1 in (2.5 cm) piece fresh root ginger, finely chopped 2 tbsp ghee 1 tsp fennel seeds Pinch of asafoetida oil for frying 2 tbsp corn oil 1/2 tbsp cumin seeds 4 cloves 1 onion, finely chopped 7 oz (200 g) Greek-style yogurt 2 tbsp ground coriander 1/2 tsp ground turmeric 1/2 tsp red chilli powder salt and sugar, as needed 2 green chillies, stalk removed and slit into 4 1/2 in (1 cm ) piece fresh root ginger, in julienne 3/4 oz (20 g) coriander leaves, chopped Juice of 1/2 lemon
