- 9oz /275g of white or wholemeal shortcrust pastry, or 1 ready-made pie crust (make sure it does not contain hydrogenated fat)
- 2oz/50g butter
- 4 strips of bacon, cut into small pieces
- 16oz/450g leeks, sliced into small rings
- 3 eggs
- 6oz/150ml 2% milk
- 1tsp Dijon mustard
- 4oz/120g grated Compte or gruyere cheese (or white cheddar)
- Freshly ground black pepper
