Leek And Bacon Flan Recipe

Ingredients

  • 9oz /275g of white or wholemeal shortcrust pastry, or 1 ready-made pie crust (make sure it does not contain hydrogenated fat)
  • 2oz/50g butter
  • 4 strips of bacon, cut into small pieces
  • 16oz/450g leeks, sliced into small rings
  • 3 eggs
  • 6oz/150ml 2% milk
  • 1tsp Dijon mustard
  • 4oz/120g grated Compte or gruyere cheese (or white cheddar)
  • Freshly ground black pepper
