Creamy Clam Chowder With Crispy Bacon Recipe

Ingredients

  • 4 slices applewood smoked bacon, diced
  • 2 tablespoons unsalted butter
  • 1 small leek, white and light green parts only, halved lengthwise and thinly sliced crosswise
  • 1 small finely chopped onion
  • 2 stalks finely chopped celery
  • 1 large garlic clove, minced
  • 2 sprigs fresh thyme
  • 1 dried turkish bay leaf
  • 4 small yukon gold potatoes, peeled and cut into 1/2-inch cubes
  • 1/2 cup heavy cream
  • 1/2 teaspoon freshly ground black pepper
  • seas salt, or to taste
  • 1 bottle Bay Harbor clam juice
  • 2 small cans Bay Harbor chopped clams
  • 1 can of Bay Harbor clam stock
  • 1/4 cup finely chopped fresh parsley
  • chopped fresh chives or green onions, for garnish
