  • 1 ear of corn cooked
  • 6 freshly cooked medium artichokes with hearts diced and leaves separated and left whole
  • 1/2 cup diced roasted red bell pepper
  • 1 small red onion diced
  • 1/2 cup peeled diced jicama
  • 3 serrano chilies seeded and minced
  • 1/2 bunch fresh cilantro finely chopped
  • 3 limes juiced
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
