Autumn Herbed Chicken With Fennel And Squash Recipe


  • 3-4 pounds chicken thighs
  • salt and pepper to taste
  • All purpose flour, as needed
  • 2 tbsp olive oil
  • 1 fennel bulb, thinly sliced (onions also work)
  • 1/2 butternut squash, peeled seeded and cut into 3/4 inch cubes
  • 1 tsp dried thyme
  • 3/4 cup chicken broth
  • 1/2 cup apple cider or apple juice
  • fresh basil, sliced for garnish (optional)
  • 2 tsp fresh rosemary, finely minced for garnish (optional )
