- 24 ounces of sauerkraut, drained and rinsed
- 1 large onion, chopped
- 2 fuji apples, peeled and chopped (or a Rome apple would work) We love Fuji's
- 1/2 cup of raisins
- 1 can of water chestnuts, drained and chopped
- 1/4 cup of brown sugar
- 1/2 teaspoon of caraway seeds
- 1 bay leaf
- 1/2 teaspoon of poultry seasoning
- 1 cup of apple juice
- 1 can of low sodium chicken broth
- 4 boneless skinless chicken breasts/or 6 to 8 boneless skinless chicken thighs
