• 1 large onion cut into ¼ inch strips
• 2 Tablespoons butter
• ¼-1/2 teaspoons each cayenne pepper & white pepper (depending on how much eat you like)
• 1 Teaspoon dried basil leaf
• 2 Teaspoons dried oregano leaf
• 2 cups heavy cream
• 1 ½ cups sour cream
• salt to taste
• 1 package frozen crayfish meat, defrosted and drained (usually comes in 12 ounce packages)
• 1 cup shredded cheese, Mexican blend or sharp cheddar
• corn tortillas
