  • 1/2 cup sweet corn kernels (thawed if fresh not available)
  • 1/4 cup shallots, chopped

  • 2 tablespoons orange juice
  • 10 ounces plain quick-cooking couscous
  • 1/2 cup cilantro, chopped (optional)
