Ingredients
- 4 Boneless, skinless chicken breasts. The ones I used were large: each one would easily feed 2
- 1/2 C Italian dressing or whatever you like for marinade
- 1/2 C flour
- 1 C plus 4 T polenta
- 1 T herbes de provence
- salt & pepper to taste
- olive oil (approx 2T)
- 1/2 onion (small large, it just doesn't matter.)
- 1 celery rib
- 1 carrot
- 1 red or yellow bell pepper
- 1 or 2 garlic cloves, depending on preference
- 1 14 oz can diced tomatoes
- 14 oz can chicken broth
- 1/2 c grated parmesan (or pecorino romano)
- 4 T gorgonzola (optional)
