Munchin Crunchin Tuna Salad Sushi Recipe

Ingredients

  • Rice
  • 1 1/2 cups brown short-grain (or "sushi") rice
  • 3 cups water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp tamari
  • Tuna Filling
  • 1 (6-oz) can solid, white tuna (low sodium in water), drained
  • 1 tsp lime juice
  • 1 tsp toasted sesame oil
  • 1 tbsp low-fat mayonnaise
  • 1 tsp wasabi paste (more if you'd like)
  • 5 wasabi- or sesame-flavoured rice chips (like Lundberg's Wasabi rice chips), crumbled
  • Filling and Assembly
  • 1/2 avocado, cut into sticks about 1/4" thick
  • 1/2 field cucumber, peeled and cut into sticks about 1/4" thick
  • 1 carrot cut into sticks about 1/4" thick
  • 1 red pepper, seeds removed and cut into sticks about 1/4" thick
  • 4 sheets toasted nori
