Tuna Salad With Curried Avocado Dressing

Ingredients

    1/2 C. cooked brown rice
    1 green onion, chopped
    1/4 tsp. curry powder, divided
    4 leaves red leaf lettuce
    9 slices English cucumber, peel on
    1/4 small Haas (California) avocado
    1/4 C. nonfat yogurt
    1 clove garlic, minced and crushed with a pinch of kosher salt
    2 Tbsp chopped cilantro
    dash ground ginger
    1 tsp. extra virgin olive oil
    2 Tbsp chopped sun-dried tomatoes
    pinch kosher salt
    2.8 oz. white albacore tuna (I use ready-to-eat cups that require no draining)

Description

In The Picture, I Also Added Another 1/4 Of The Avocado, Chopped, Into The Salad. I Had Just Finished A Hard Workout And The Extra Good Fat Was Welcome! (The Extra Avocado Would Add About 7 Grams Of Fat, Mostly Monounsaturated, And About 73 More Calories.
