- 1/2lb bacon, cooked crisp and crumbled
- 1/2 stick butter
- 10-12oz fresh spinach, chopped
- 1T fresh thyme, chopped
- 2-3 shallots, diced
- 3 cloves garlic, minced
- 1 1/2 cups panko bread crumbs, divided
- 1/3 cup freshly grated Manchego or parmesan cheese
- 1 1/2T smoked paprika, divided
- about 1/3 cup half and half or heavy cream
- 1 large lemon
- Old Bay Seasoning
- kosher or sea salt and fresh ground pepper
- For Old Bay Cream Sauce
- 1 cup sour cream
- 1 heaping T Old Bay
- 1T Dijon
- 1T fresh chives, chopped
- several dashes of hot sauce
- fresh ground pepper
