- NM Hatch chilis, blistered and skinned
- 8 slices of cheese, your choice cheddar, colby or jack
- 1 cup skim milk
- 4 eggs
- 2 Tbsp flour
- 1 cup shredded pepper jack or cheddar cheese
- 1 lb ground beef
- 1 package taco seasoning and 1 tsp cumin
- salt and pepper to taste (for the meat)
- guacamole (wholly guacamole single servings works well)
- Mexican crema
