Greek Pita Recipe

Ingredients

  • 14 oz. can of artichoke heart cut up into quarters
  • 1/2 cup chopped red bell pepper
  • 2 celery stalks chopped
  • 1 medium tomato, chopped
  • 1 garlic clove, minced
  • 2 tablespoons of olive oil
  • juice of half a lemon
  • 1 tablespoon fresh dill (or 1 teaspoon dried)
  • 2 tablespoons fresh parsley (or to taste of dried)
  • 2/3 cup feta (about 5 ounces)
  • salt and pepper to taste
  • 3/4 cup sliced black olives (optional)
  • leafy lettuce (romaine, butter, red, etc.)
  • 4 pitas
