Ingredients
- 14 oz. can of artichoke heart cut up into quarters
- 1/2 cup chopped red bell pepper
- 2 celery stalks chopped
- 1 medium tomato, chopped
- 1 garlic clove, minced
- 2 tablespoons of olive oil
- juice of half a lemon
- 1 tablespoon fresh dill (or 1 teaspoon dried)
- 2 tablespoons fresh parsley (or to taste of dried)
- 2/3 cup feta (about 5 ounces)
- salt and pepper to taste
- 3/4 cup sliced black olives (optional)
- leafy lettuce (romaine, butter, red, etc.)
- 4 pitas
