  • Fresh thyme, rosemary and oregano

  • 2 lbs of lean ground pork
  • 1 ½ lbs of fairly fatty ground pork
  • 1 large white onion
  • 8 cloves of garlic
  • 2 tbls. of cumin
  • 2 large eggs
  • 1 ½ cups of coarse but fresh breadcrumbs
  • ¾ cup more of mavrodaphne
  • Half a bunch of flat leaf parsley.
