Ingredients
- 1lb ground venison(or other ground meat, see above)
- 1 egg
- 1/2 cup Italian seasoned bread crumbs
- 1T Dijon mustard
- 3oz cream cheese, softened
- 1/4 cup parmesan cheese, grated
- 1t dried Italian seasoning(or 1-2T various fresh Italian herbs)
- 1 medium onion, diced
- 4 cloves garlic, minced
- 4T butter(or 2T each of olive oil and butter)
- 6 cups stock(chicken, pork, lamb, turkey or veggie)
- 1 cup orzo pasta
- 28oz crushed tomatoes, undrained
- 15oz can Canellini beans, undrained
- 3 cups fresh spinach(or similar green), chopped
- Fresh Parmesan for serving
Description
I Created This Soup By Combining Some Aspects Of Other Italian Favorites. The Result Is A Hearty, But Mild, Thick Soup. The Meatballs Can Be Made Using A Variety Of Ground Meats. Lamb, Venison, Pork Or Even Chicken Or Turkey.
