Whats Italian For Hodgepodge Soup Recipe

Ingredients

  • 1lb ground venison(or other ground meat, see above)
  • 1 egg
  • 1/2 cup Italian seasoned bread crumbs
  • 1T Dijon mustard
  • 3oz cream cheese, softened
  • 1/4 cup parmesan cheese, grated
  • 1t dried Italian seasoning(or 1-2T various fresh Italian herbs)
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4T butter(or 2T each of olive oil and butter)
  • 6 cups stock(chicken, pork, lamb, turkey or veggie)
  • 1 cup orzo pasta
  • 28oz crushed tomatoes, undrained
  • 15oz can Canellini beans, undrained
  • 3 cups fresh spinach(or similar green), chopped
  • Fresh Parmesan for serving

Description

I Created This Soup By Combining Some Aspects Of Other Italian Favorites. The Result Is A Hearty, But Mild, Thick Soup. The Meatballs Can Be Made Using A Variety Of Ground Meats. Lamb, Venison, Pork Or Even Chicken Or Turkey.
