Ingredients
- 1/2 of an organic chicken, cut into 4 pieces
- 3 cups water - or enough to just cover chicken
- 1 large stalk celery, coarsley chopped
- 1/2 a medium onion (reserve the other half)
- 1/2 bunch thyme
- handful of parsley
- 1 bay leaf
- sea salt & whole peppercorns, to taste
- Dumplings:
- 2 cups all-purpose flour
- kosher salt and freshly ground black pepper
- 1 tablespoon baking powder
- 2 tablespoons unsalted butter
- about 1 cup half and half
- 1 tablespoon finely chopped parsley leaves
- Sauce:
- 2 tablespoons butter
- 1/2 medium onion, finely chopped
- 2 carrots, peeled and sliced into 1/2-inch rounds
- 2 ribs celery, finely chopped
- reserved chicken stock
- quick roux: 2 tablespoons flour whisked with about 1/2 cup heavy cream
- additional parsely, for garnish

Yesterday Was The First Day I Really Felt Autumn Sneeking In. It Inspired Me To Make One Of My Favorite Comfort Foods, Chicken N' Dumplings. I LOVE The Dumplings The Most So I Have More Of A Dumpling Vs. Chicken Ratio! I Hope You Try And Enjoy My Version
