Chicken N' Dumplings Recipe

Ingredients

  • 1/2 of an organic chicken, cut into 4 pieces
  • 3 cups water - or enough to just cover chicken
  • 1 large stalk celery, coarsley chopped
  • 1/2 a medium onion (reserve the other half)
  • 1/2 bunch thyme
  • handful of parsley
  • 1 bay leaf
  • sea salt & whole peppercorns, to taste
  • Dumplings:
  • 2 cups all-purpose flour
  • kosher salt and freshly ground black pepper
  • 1 tablespoon baking powder
  • 2 tablespoons unsalted butter
  • about 1 cup half and half
  • 1 tablespoon finely chopped parsley leaves
  • Sauce:
  • 2 tablespoons butter
  • 1/2 medium onion, finely chopped
  • 2 carrots, peeled and sliced into 1/2-inch rounds
  • 2 ribs celery, finely chopped
  • reserved chicken stock
  • quick roux: 2 tablespoons flour whisked with about 1/2 cup heavy cream
  • additional parsely, for garnish

Yesterday Was The First Day I Really Felt Autumn Sneeking In. It Inspired Me To Make One Of My Favorite Comfort Foods, Chicken N' Dumplings. I LOVE The Dumplings The Most So I Have More Of A Dumpling Vs. Chicken Ratio! I Hope You Try And Enjoy My Version
