- 3lbs ground chuck (coarse)
- 1/2 stick butter
- 1 large spanish onion (medium dice)
- 1 poblano (or bell) pepper
- 1 habaanero pepper (split lengthwise)
- 1 jalapeno pepper (seeded -with very fine dice)
- 1 stalk celery (very fine dice)
- 2 cans whole tomatoes with juice
- 5 cloves garlic (coarse mince)
- chile powder to taste
- 1 tsp fish sauce(nuoc mam)
- 1 tsp white pepper
- 1tsp ground cumin
- salt to taste (if needed - fish sauce is salty)
